On 3 occasions the orders numbers in the cart have been skipped. In other words, we are at order 562, then instead of going to 563, the next order generated would be 564.
Has anybody ever experience this before?

That can happen if the customer goes the majority of the way through checkout and then abandons the cart, or if the order was put through but failed (card was declined, etc). Check the Orders->View Failed Transactions page and see if you have some recent failed transactions.
