    Hi!
    Can I add a service fee to each cart - not as a required product so that it doesn't show in searches, etc?

    sure. You can specify the extra charge amount here in this appconfig: ShippingHandlingExtraFee. That is exactly the purpose of it.

    Default Combines with UPS charges

    Be careful with per order charge as it gets added into the shipping charge in the checkout making the shipping charge look very large.

    These purchases won't have shipping (class registrations and payments on accounts, heavy mods) so I'll rename the shipping line too.
