Default New Template for Specific Category

Does anyone know how I could use a different template for a specific category or products?

I reviewed the template switching topic, and basically did what the procedure stated, but when I called out a new template skin under the extension data tab, the specific category page doesn't seem to be reading it. I also reset the cache, but the category page still seems to read the old template skin. Is there any other reasons why it would not read the new template skin?

I did clear out my cookies, but it still did not show the skin. I know it works because its using it on a stand alone page, but it's not working for the category.
